Rocky Road With Vanilla Fudge Recipe
This delicious rocky road fudge recipe made with our vanilla fudge pieces and Lotus Biscoff biscuits doesn't hang around for long in Ruby's house!
You will need;
350g Milk or plain chocolate
110g Butter, chopped into small cubes
100g Lotus Biscoff biscuits broken into pieces
100g Ruby's vanilla fudge pudding pieces
85g Mini Marshmallows
85g Chopped walnuts or any chopped nuts or dried fruit of your choice.
Method
In a large bowl, mix together the broken biscuits, marshmallows, walnuts and 70g of the fudge pieces.
Break the chocolate into squares and place in a heatproof bowl, then set the bowl over a saucepan of gently simmering water and heat until melted. Add the butter and stir well until all the butter has completely melted.
Pour just over half of the chocolate mixture into the dry ingredients and stir well until combined. Tip the mixture into an 8" cake tin lined with greaseproof paper and press down on the mixture firmly with the back of a spoon.
Pour the remaining melted chocoate over the top of the mixture and smooth over with a spatula. Sprinkle the remaining fudge pieces on top and refrigerate for two hours (no picking!).
Carefully turn out of the tin and cut into eight pieces.
N.B. If you prefer more or less fudge pieces sprinkled on top, you can adjust the ratio accordingly.
